Prepare the Asparagus:
Start by boiling salted water. Put the asparagus slivers in and cook for around 2-3 minutes until they turn tender-crisp. Take it out of the pot and put it immediately to a bowl filled with ice water to prevent further cooking. Drain and set aside.
Make the Caesar Dressing:
Begin by, whisking together in a bowl some mayo, minced garlic, lemon juice, dijon mustard, Worcestershire sauce, grated Parmesan cheese, salt and pepper.
Drizzle while continuously whisking slowly olive oil into it until smooth and creamy then adjust seasoning to taste.
Assemble the Salad:
In a large salad bowl mix together the chopped romaine lettuce leaves and blanched asparagus spears.
Pour dressing made over lettuce and asparagus that has been cooked in boiling water. Mix gently until all ingredients are covered by dressing evenly.
Serve:
Divide the salad between four dishes.
Top each portion with Parmesan cheese shavings or grated and croutons for added crunch if you like.
